Who doesn’t love a quick and easy soup? It doesn’t get better than this one and It is safe for detox and elimination programs!
Creamy Zucchini Cashew Soup
1 large or 2 small zucchini, cut into chunks, cooked
1/4 cup raw cashews (soaked)
Himalayan salt (to taste)
Variations:
Herbal seasoning or fresh herbs, like basil, dill, Italian seasonings, cayenne (optional to taste)
Steamed veggies (optional for chunky soup)
What to do:
Soak cashews in enough water to cover for 1 hour; drain. Combine cashews, cooked zucchini, salt, and seasonings in a high speed blender and mix until smooth, adding water as needed for desired consistency.
If soup is not hot enough for your enjoyment, gently reheat in saucepan. For a chunky soup, add steamed chopped veggies of your choice. Makes one serving.
